Chicken Alla Parmigiana

PREPERATION: 20 minutes
COOKING TIME: 10 minutes
  1. Pass the bread crumbs through a sieve
  2. Mix the eggs in a bowl
  3. Cut the poultry supreme in 2 halves
  4. Salt and pepper the 2 halves
  5. Flour the 2 halves and shake them
  6. Dip the halves in the eggs
  7. Drain the halves well
  8. Put them in the bread crumbs
  9. Cover the halves in bread crumbs
  10. Heat-up oil in a pan
  11. Dip in the hot oil pan and fry for 2 to 3 minutes on each side
  12. Take out of pan and lay on paper towel
  13. Place the halves on parchment paper on a cookie sheet
  14. Slice the cheese in chips with a peeler
  15. Finely mince the fresh basil
  16. Pour the tomato sauce in a bowl
  17. Garnish the halves with tomato sauce
  18. Lay the fresh basil on the tomato sauce
  19. Cover the basil with the cheese chips
  20. Pre-heat the oven at 180°c/350°f
  21. Cook in the oven for 4 to 5 minutes
  22. Dresser the plates with a few cooked vegetables in season, a touch of tomato sauce and a drizzle of virgin olive oil
  23. Serve
