Preperation
- Pass the bread crumbs through a sieve
- Mix the eggs in a bowl
- Cut the poultry supreme in 2 halves
- Salt and pepper the 2 halves
- Flour the 2 halves and shake them
- Dip the halves in the eggs
- Drain the halves well
- Put them in the bread crumbs
- Cover the halves in bread crumbs
- Heat-up oil in a pan
- Dip in the hot oil pan and fry for 2 to 3 minutes on each side
- Take out of pan and lay on paper towel
- Place the halves on parchment paper on a cookie sheet
- Slice the cheese in chips with a peeler
- Finely mince the fresh basil
- Pour the tomato sauce in a bowl
- Garnish the halves with tomato sauce
- Lay the fresh basil on the tomato sauce
- Cover the basil with the cheese chips
- Pre-heat the oven at 180°c/350°f
- Cook in the oven for 4 to 5 minutes
- Dresser the plates with a few cooked vegetables in season, a touch of tomato sauce and a drizzle of virgin olive oil
- Serve
